How to make Savory Mango and Basil Stuffed Chicken

This recipe combines the sweetness of mango with the freshness of basil and the creamy texture of cheese, creating a unique and flavorful dish. Ingredients:

* 2 boneless, skinless chicken breasts
* 1 ripe mango, diced
* 1/4 cup fresh basil leaves, chopped
* 1/4 cup cream cheese or goat cheese
* 2 tablespoons olive oil

Instructions:

1.  Preheat your oven to 375°F (190°C).

2.  Lay the chicken breasts flat on a clean surface. Using a sharp knife, make a horizontal cut through the thickest part of each breast to create a pocket without cutting all the way through.

3.  In a mixing bowl, combine the diced mango, chopped basil, and cream cheese. Season the mixture with a pinch of salt and a dash of pepper.

4.  Gently stuff each chicken breast pocket with the mango, basil, and cream cheese mixture. Press the edges of the chicken together to seal the pocket.


5.  Heat olive oil in an oven-safe skillet over medium-high heat. Once hot, add the stuffed chicken breasts and sear them for 2-3 minutes on each side, until they are golden brown.

6.  Transfer the skillet with the chicken to the preheated oven and bake for 15-20 minutes or until the chicken is cooked through (internal temperature reaches 165°F or 74°C).

7.  Remove the chicken from the oven and let it rest for a few minutes.

8. Slice the stuffed chicken breasts into medallions and serve with a side salad or your choice of side dishes.
